FRUIT POUND CAKE
MAKES 8 SERVINGS.
1 1/4 cups butter
2 3/4 cups sugar
5 eggs
1 tbs grated orange peel
1 tsp orange extract
3 cups flour
1 tsp baking powder
1/4 tsp salt
1 cup milk
1/2 cup cranberries, halved
1/2 cup chopped walnuts
GLAZE---
2 cups powdered sugar
1/3 cup butter, melted
3 tbs hot water
2 tsp vanilla
In a bowl, cream butter and sugar until fluffy. Add eggs, beat well. Beat in orange peel and extract. Combine flour, baking powder and salt, add to creamed mixture alternately with milk. Beat until combined. Fold in cranberries and walnuts. Transfer to a greased and floured tube pan. Bake at 350 degrees for 60 min. or until done. Cool 10 min. before removing from pan. FOR GLAZE---In a bowl, combine powdered sugar, butter, vanilla and water to achieve desired consistency. Drizzle over cake. SERVE & ENJOY...
