[SimplifyMe] Juicy Chicken {Burgers}

 

JUICY CHICKEN BURGERS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

TOASTS---
4 eggs
1/2 cup grated Parmesan cheese
1/2 lemon, juiced
Salt and Pepper
Oil and Butter
8 slices French bread
BURGERS---
1 1/2 pounds ground chicken
1/2 cup chopped parsley
1 lemon, zested, juiced
1 onion, chopped
4 cloves garlic, chopped
Salt and Pepper
2 tbs oil
6 cups spinach

Heat oven to 200 degrees. Heat a skillet. In a bowl, beat eggs, cheese, juice, salt and pepper. Drizzle skillet with oil, then melt a dab of butter into oil. Coat bread in egg mixture, cook until golden. Transfer toasts to a plate, keep warm in oven. *In a bowl, combine chicken, parsley, zest, onion, garlic, salt and pepper. Form mixture into 4 patties. Drizzle skillet with oil, add patties, cook until browned and cooked through. Drizzle burgers with juice, divide among 4 toasts. Add spinach to skillet, toss until wilted, season. Pile spinach on burgers, top with remaining toasts. SERVE & ENJOY...
