[SimplifyMe] Tofu Veggie {Stir-Fry}

 

TOFU VEGGIE STIR-FRY
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

3 tbs oil
14 oz container firm tofu, drained, cubed
1 tbs hoisin sauce
1 tsp sugar
1 tsp toasted sesame oil
8 oz mushrooms, sliced
2 leeks, white and light green parts, halved lengthwise, sliced crosswise
2 cup frozen peas
3 cups cooked long grain rice

In a skillet, heat 1 tbs oil. Add tofu, cook until browned. Transfer to a bowl, toss with hoisin, sugar and sesame oil, season. In same skillet, heat remaining oil. Add mushrooms, toss, season. Cook until browned and liquid evaporates. Add leeks, cook until tender. Stir in peas, cook until heated through. Stir in tofu, season. SERVE with rice & ENJOY...
