LEMON CHIVE SAUCE CHICKEN
MAKES 3 SERVINGS.
1 tsp each salt, pepper and lemon pepper
2 tbs each oil and chopped chives
4 tbs flour
3 chicken cutlets
Zest and juice of 1 lemon
1 cup chicken broth
3 minced cloves garlic
Splash half and half
On a dish, combine salt, pepper, lemon pepper and 2 tbs flour. Coat chicken in flour mixture, place on a plate. Sprinkle half of the zest over cutlets. Heat oil in a skillet. Brown chicken until cooked through. Transfer to a plate. *IN a bowl, whisk juice, broth, chives, garlic and remaining zest until smooth. Pour into skillet with drippings, whisk until combined. Add half and half. Return chicken to pan, heat through. TO SERVE---Spoon sauce over cutlets & ENJOY...
