[SimplifyMe] Cabbage Lentils {with Fish}

 

CABBAGE LENTILS WITH FISH
MAKES 2 SERVINGS.

1 tbs oil
1 onion, chopped
1 tsp caraway seeds
Salt and Pepper
1/4 head cabbage, cored, chopped
1/8 cup balsamic vinegar
1 tsp orange zest plus 1/8 cup juice
1/4 cup raisins
1/2 of a 15 oz can lentils
2 skinless fish fillets
Chopped parsley

Heat 1/2 tbs oil in a skillet. Add onion, sprinkle with caraway, salt and pepper. Cook until onions are beginning to brown. *Add cabbage, cook 4 min. Add vinegar and 1 tbs water, simmer until nearly all of the liquid has evaporated. *Stir in orange juice and zest. Add raisins and lentils, toss to combine. Cook until lentils are heated through and cabbage is tender. *Heat remaining oil in a skillet. Season fish with salt and pepper, cook until golden brown. Toss cabbage with parsley. SERVE with fish & ENJOY...
