BULGUR WHEAT WITH TURKEY
MAKES 4 SERVINGS.
1 cup each vegetable broth and quick cooking bulgur
2 tomatoes, seeded, diced
1 cucumber, peeled, seeded, diced
1/2 cup crumbled feta cheese
1/4 cup each mint, chopped, and parsley, chopped
3 tbs lemon juice plus 1 tsp lemon zest
2 cloves garlic, minced
1 tsp honey
Salt and Pepper
1/4 cup oil
1 pound turkey cutlets
Bring broth to a boil. Pour over bulgur in a bowl, let stand 1 hour. *Heat grill. Toss bulgur with tomatoes, cucumber, feta, mint and parsley. *In a bowl, whisk lemon juice, zest, garlic, honey, salt and pepper. Add oil. *Toss turkey with 2 tbs dressing, season with salt and pepper. Coat cutlets with cooking spray. Grill cutlets until done. *Toss bulgur with remaining dressing.
