BACON MUSHROOM SPINACH SALAD
MAKES 2-3 SERVINGS.
3 slices bacon
1/4 cup each sliced onions and balsamic vinegar
3 oz pkg sliced mushrooms
1 clove garlic, minced
1/2 tsp Dijon mustard
1/4 tsp honey
5 oz bag spinach
2 hard boiled eggs, sliced
In skillet, cook bacon until crisp. Remove from skillet, drain, chop. Remove all but 1 tbs fat from skillet. *Add onions, mushrooms and garlic to skillet. Cook until lightly browned. Season with salt and pepper. Remove from skillet, set aside. *In bowl, whisk together vinaigrette, mustard and honey. On platter, arrange spinach, eggs, onions and mushrooms. Drizzle salad with vinaigrette, sprinkle with bacon. SERVE & ENJOY...
