SALSA STEAK FAJITAS
MAKES 4 SERVINGS.
1/4 cup cilantro or parsley leaves
8 flour tortillas, warmed
1 onion, sliced 1/2" thick
2 tsp garlic powder
1 pound beef skirt steak
1 cup salsa
3 tbs vegetable oil
3 bell peppers, cored, sliced 1/2" thick
Salt and Pepper
12 oz can beer
In a resealable bag, combine steak, beer, garlic powder, 2 tsp salt and 1/4 tsp pepper. Refrigerate 1 hour. Heat a grill. In a bowl, toss together peppers, onion, 2 tbs oil, 1 tsp salt and 1/4 tsp pepper. Grill vegetables until tender and slightly charred. Transfer to a platter, tent with foil to keep warm. Remove steak from marinade, pat it dry with paper towels. Coat with remaining oil, grill to desired doneness. Let rest 10 min. Thinly slice steak against the grain, pile it onto warm tortillas with peppers and onion. Top with salsa and cilantro, then SERVE...
