EASTER CUPCAKES---Cupcakes with candy coated almonds on top of them that look like flowers.
MAKES 28 CUPCAKES.
1 pound bag candy coated almonds
1 pound pkg vanilla frosting
16 oz pkg pound cake mix
Red and Green food coloring
2 tsp almond extract
1 cup toasted sliced almonds, finely chopped
Heat oven to 350 degrees. Place 14 liners each in wells of regular and mini cupcake pan. Prepare cake mix according to package directions, adding almonds and almond extract, spoon into liners. Bake regular cupcakes 15 min. and minis 8 min. or until done. Let cool. Using food coloring, tint 1/2 frosting pink and other half of frosting green. Frost 1/2 cupcakes pink and 1/2 green, arrange candy coated almonds in flower shape on each, then SERVE...
