CHICKEN & RICE---Baked chicken thighs with a veggie rice mixture.
MAKES 6 SERVINGS.
6 boneless skinless chicken thighs
2 pkgs 10 oz each frozen rice with broccoli and carrots
8 oz sliced mushrooms
1/4 tsp salt
1/2 cup grated Parmesan cheese
1/8 tsp pepper
1/2 cup mayonnaise
1 tbs oil
1/2 tsp Italian seasoning
Saute mushrooms in oil in a skillet until tender. Combine cheese, mayonnaise and Italian seasoning in bowl, set aside. Place rice mixture in a greased baking dish, sprinkle with salt and pepper. Top with mushrooms and chicken. Spread cheese mixture over chicken. Bake uncovered at 325 degrees for 50 min. or until done, then SERVE...
