CHEESY HERB MASHED POTATOES
MAKES 6 CUPS.
1 tbs minced rosemary
3 sprigs rosemary
2 1/2 pounds potatoes, peeled, cut into cubes
1/4 tsp pepper
1 tbs minced lemon zest
1/3 cup buttermilk
4 tbs unsalted butter, melted
1/2 tsp salt
4 oz goat cheese
BOIL potatoes and rosemary sprigs in salted water until tender. Remove sprigs, drain potatoes. Return potatoes to pan, dry briefly, stirring often. Remove pan from heat. Mash potatoes, stir in butter. Add goat cheese, stir until melted. Fold in buttermilk, minced rosemary, zest, salt and pepper, then SERVE...
