SAUCY SHRIMP PASTA
MAKES 4 SERVINGS.
2/3 cup garden vegetable cream cheese
1 pound shrimp
12 oz box fettuccine pasta
1/4 tsp salt
2 tbs lemon juice
2 tbs dill, chopped
2 cloves garlic, sliced
1 tbs oil
1/2 tsp pepper
2 tbs capers
1/3 cup heavy cream
1 onion, sliced
BRING a pot of salted water to a boil. Add pasta, cook per package directions. Drain, reserving 1/2 cup pasta water. Heat oil in a skillet. Add onion and garlic, cook 5 min. Stir in shrimp, cream cheese, cream, dill, capers, lemon juice, pepper and salt. Cook until shrimp are cooked through. Stir cooked pasta into sauce, along with some pasta water. SERVE immediately...
