[SimplifyMe] Pineapple Cherry {Cake}

 

PINEAPPLE CHERRY CAKE
MAKES 8 SERVINGS.

Maraschino cherries, stemmed
1 1/3 cups brown sugar
20 oz can sliced pineapple, 2 tbs juice
2 eggs
1/4 cup vegetable shortening
2 cups sugar
1 tbs baking powder
2 tsp vanilla
1 1/2 cups milk
1 stick unsalted butter
1 tsp salt
2 1/2 cups flour

Heat oven to 350 degrees. MAKE CAKE BATTER---Combine flour, baking powder, salt, sugar, 1/2 stick butter, shortening, milk, eggs, vanilla and 2 tbs pineapple juice in a bowl. Beat until combined. Set aside. Melt remaining butter in a skillet. Sprinkle brown sugar over butter. Do not stir. As soon as sugar dissolves, remove from heat, layer pineapple slices over top, place cherries in centers of pineapple slices. POUR batter over pineapple slices. Bake cake 40 min. or until done. Put a plate upside down on top of skillet, invert skillet so cake is turned onto plate. Let cool slightly before cutting into wedges, SERVE warm...
