BOURBON PECAN PIE Makes 8 servings.
1/2 tsp salt
3 eggs, beaten
1 cup brown sugar
4 tbs unsalted butter
3 tbs bourbon or whiskey
1/2 cup dark corn syrup
1 1/2 cups pecans, toasted and 3/4 cup coarsely chopped
1/2 pkg 14 oz refrigerated piecrust, 1 crust
Heat oven to 350°. Unroll piecrust into a 9" pie pan, crimp edge and refrigerate until ready to fill. In a saucepan, melt butter. Remove from heat and whisk in pecans, brown sugar, corn syrup, eggs, bourbon and salt. Pour filling into crust. Bake pie until set in the middle, 45 min. Transfer to a rack to cool completely, then SERVE...
