[SimplifyMe] Cider Spiced (Pie)---with Apples

 

CIDER SPICED APPLE PIE                                     Makes 8 servings.

1 egg white, beaten
1/8 tsp salt
1/4 cup cornstarch
3 pounds apples
2 tbs unsalted butter, cut into small pieces
1 tbs ground mulling spices
1/2 cup sugar
14 oz pkg refrigerated piecrust, 2 crusts

Heat oven to 375°. Roll out piecrusts into two 12" rounds. Fit 1 round in a 9" pie plate. Refrigerate pie plate and second crust until ready to fill. Peel, core and cut apples into slices. In a bowl, toss together apples, sugar, cornstarch, spices and salt. Spoon mixture into piecrust, pouring any juices on top.
-Dot with butter and cover with second piecrust. Crimp edges of the 2 crusts together. Brush top of pie with egg white, sprinkle with sugar and cut 3 vents in the top. Line a baking sheet with foil. Place pie on top and bake until top is golden and filling is simmering, 50 min. then SERVE...
