BREAKFAST FOR DINNER PANCAKES Makes 4 servings.
1 3/4 cups 2% milk
2 cups buckwheat or multigrain pancake mix
1/4 cup calvados, optional
1 tbs lemon juice
A little grated nutmeg
2 tbs finely chopped thyme
3 tbs butter
5 eggs
1 cup maple syrup
2 tbs brown sugar
Salt
A pinch cinnamon
2 apples, peeled and sliced
12 slices bacon
Heat oven to 375°. Bake bacon on a broiler pan until crisp, 15 min. Heat a griddle or skillet. In a skillet, melt butter until foaming. Add apples, thyme, cinnamon, nutmeg and a little salt. Cook until softened, 5 min. Add lemon juice and brown sugar, flip apples and cook 1 min. Add calvados, if using and cook to reduce 1 min.
-Add maple syrup and lower heat to a simmer. Combine pancake mix, 1 egg and milk. Butter griddle and cook pancakes to make 8 cakes. In a skillet, fry remaining eggs in some melted butter. Stack each plate with a pancake, 3 slices of bacon, a egg, a second pancake and apples, then SERVE...
