TOMATO BACON PIZZAS
MAKES 4 SERVINGS.
4 cups water
2 cups stemmed chopped kale
1 cup basil leaves
2 oz Parmesan cheese, grated
1 garlic clove, crushed
1 tbs water
2 tsp lemon juice
2 tbs oil
4 pitas
4 sliced tomatoes
2 bacon slices, cooked, crumbled
15 oz mozzarella cheese, shredded
Place a baking sheet in oven, heat oven to 400 degrees. Bring water to a boil in a pan. Add kale, cook 1 min. Drain, squeeze liquid from kale. *PLACE kale, basil, 2 tbs Parmesan, and garlic in a processor or blender. Process until chopped. Add 1 tbs water, juice, and salt, pulse 5 times, pour in oil, process until blended. *SPREAD 2 tbs pesto over each pita. Top with tomatoes and bacon. Sprinkle with remaining cheeses. Remove pan from oven, place pitas on pan. Bake 12 min. or until crust is browned. SERVE & ENJOY...
