MINTY CARROT RICE
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cup chopped onion
1 cup arborio rice
2 tbs butter
2 cups chicken stock
1 1/2 cups diced carrot
3/4 cup carrot juice
1/3 cup vegetable broth
1/2 cup grated Parmesan cheese
1/3 cup mint, chopped
In pot, cook onion and rice in butter, stirring 2 min. Add next 4 ingredients, boil, then simmer 15 min. Stir in cheese and mint, season. SERVE & ENJOY...
