LAYER CAKE TIP
For even, easy to stack cake layers, make you own cake strips. Cut 1 1/2" strips off a dish towel, wet them so they are damp, then wrap a strip around each pan, secure with a safety pin. Bake as usual. The damp fabric will lower the pan's temp so the cake's edges don't set before the center, eliminating doming. If strips look dry while baking, remove them to avoid burning...
