EGGS ON HAM
MAKES 2 SERVINGS.
1/4 cup flour
3 eggs
1 cup breadcrumbs
2 ham steaks
3 tbs olive oil
3 tbs mustard
1 cup watercress
Put flour, 1 beaten egg, and breadcrumbs in three separate bowls. Coat ham in flour, then egg, then breadcrumbs. In skillet, cook ham in oil, 3 min. per side, then fry remaining 2 eggs. Top ham with mustard, watercress, and eggs, season. SERVE & ENJOY...
