CHORIZO BURGERS WITH GUACAMOLE
MAKES 4 SERVINGS.
1 pound chorizo, casings removed, crumbled
1 pound ground beef
3 tbs grated onion
2 tbs Worcestershire
1 tsp cumin
1/4 cup chopped onion
1 jalapeno pepper, chopped
2 tbs lemon juice
1 avocado
1 ear corn, kernels scraped from cob
1 clove garlic, grated
4 rolls, split
4 lettuce leaves
1 tomato, sliced
Heat a grill. In a bowl, combine chorizo, beef, onion, Worcestershire, and cumin, season. Form mixture into 4 patties. Drizzle patties with oil. *In a bowl, combine onion, jalapeno, and lemon juice, season, let stand 10 min. Mash in avocado, then stir in corn and garlic. *Add patties to grill, cook until cooked through. Divide patties among roll bottoms. Add lettuce, tomato, guacamole, and roll tops. SERVE & ENJOY...
