CHEESY CHICKEN PIZZAS
MAKES 2 PIZZAS.
1 1/4 pounds ground chicken
1 1/2 tsp dried Italian herb blend
3/4 tsp garlic powder
3/4 tsp onion powder
3 eggs
1/4 cup flour
1 1/2 cups seasoned breadcrumbs
8 tbs grated Parmesan cheese
1 cup olive oil
1 cup shredded mozzarella cheese
1/2 cup marinara sauce
Basil leaves
Line two 8" cake pans with plastic. In a bowl, mix chicken, 1 tsp herb blend, salt, and 1/2 tsp each garlic and onion powders. Divide chicken mixture, press into pans. Cover with plastic, freeze 4 hours. HEAT oven to 400 degrees. In a bowl, beat eggs. Place flour on a plate. On another plate, combine breadcrumbs, 2 tbs Parmesan, remaining Italian herb blend, garlic and onion powders. Unwrap chicken, remove from pans. Coat chicken in flour, then egg, then breadcrumbs. Transfer to a baking sheet. SET a rack on a baking sheet. In a skillet, heat oil. Cook 1 chicken round until golden. Repeat with second chicken round. Transfer both to rack. COMBINE remaining cheeses. Spread marinara on chicken, sprinkle with cheese mixture. Bake until chicken is cooked through 15 min. Top with basil. SERVE & ENJOY...
