[SimplifyMe] Breaded Beef & {Veggies}

 

BREADED BEEF & VEGGIES
MAKES 4 SERVINGS.

VEGGIES---
2 ears corn, kernels cut from cob
1 cup quartered cherry tomatoes
1/2 cup chopped onion
Basil leaves, chopped
1 clove garlic, grated
1/4 cup oil
1 lemon, juiced
BEEF---
4 slices beef
1 cup flour
1 tsp parsley flakes
3 eggs
1 1/2 cups breadcrumbs
1/2 cup grated Parmesan cheese
Oil
1 lemon, cut into 4 wedges

Heat oven to 275 degrees. Set a wire rack in a baking sheet, place in oven. In a bowl, toss corn, tomatoes, onion, herbs, and garlic with oil and lemon juice, season. *POUND beef 1/8" thick, season. Set up three bowls for dredging: Mix flour and parsley in one, beat eggs in second, and mix breadcrumbs and cheese in third. In a skillet, pour in 1/8" oil, heat. *COAT 2 pieces of beef in flour parsley mixture, then in egg, and finally in breadcrumbs. Fry until golden. Transfer to baking sheet in oven to keep warm. Repeat with remaining beef. Divide beef among plates, top with corn mixture. SERVE with lemon wedges alongside & ENJOY...
