[SimplifyMe] Veggie Egg {Salad}

 

VEGGIE EGG SALAD
MAKES 2 SERVINGS.

3 eggs
1/4 cup mayonnaise
1/2 tbs mustard
2 cooked beets, diced
2 sweet pickles, chopped
1 tbs chopped dill

Place eggs in a pan. Add water to cover eggs. Bring to a boil. Turn off heat, let stand 10 min. Drain, peel, dice. *In a bowl, whisk mayonnaise and mustard until combined. Fold in eggs, beets, pickles, and dill, mix well. Season. Refrigerate until chilled. SERVE & ENJOY...
