[SimplifyMe] Squash {Pasta} Gluten Free

 

SQUASH PASTA
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1 pound cooked shrimp
1 tsp Italian seasoning blend
4 zucchini
4 yellow squash
1/2 cup pesto
6 basil leaves, sliced

In bowl, coat shrimp with cooking spray. Add seasoning blend, toss. With mandoline or vegetable peeler, cut zucchini and squash into long spaghetti like strips or ribbons, place in bowl. *Add boiling water to cover. Let sit 1 min. Drain. Add pesto to squash, toss. Divide among bowls. Top with shrimp and basil. Garnish with red pepper. SERVE & ENJOY...
