EASY VEGGIE-TOPPED MEATLOAF
MAKES 4 SERVINGS.
1 1/2 pounds potatoes, cut into thirds
1/3 cup milk, warmed
3 tbs butter
1 pound ground beef
2 eggs
1 1/2 tbs Worcestershire
1 bunch green onions, chopped
1/3 cup sour cream
Heat oven to 350 degrees. In a pot of salted water, bring potatoes to a boil, cook until tender, drain. Remove, discard skins from potatoes, transfer potatoes to a bowl. Mash with milk and 2 tbs butter until smooth. Season, let cool. *In a bowl, combine beef, eggs, Worcestershire, 2/3 of the green onions, 4 tbs sour cream, and 1/2 cup of the mashed potatoes, season. *Line a baking sheet. Transfer beef mixture to pan, shape into a loaf. Bake 30 min. Stir remaining green onions and sour cream into remaining mashed potatoes. Pat potatoes onto meatloaf, dot with remaining butter. Bake 15 min. Let meatloaf rest 5 min. before SERVING & ENJOY...
