CHEESY VEGETABLE ENCHILADAS
MAKES 6 SERVINGS.
12 oz frozen corn
15 oz can pinto beans, drained
14.5 oz can diced tomatoes, drained
1 zucchini, diced
4.5 oz can chopped green chiles
2 cups shredded cheddar
1 cup shredded Monterey Jack
12 flour tortillas
1 cup enchilada sauce
Heat oven to 400 degrees. Oil 2 baking dishes. Line a baking sheet. In a bowl, mix corn, beans, tomatoes, zucchini, chiles, 1 cup cheddar, and 1/2 cup Jack. Season. *Wrap 6 tortillas in damp paper towels, microwave on high 30 seconds. Divide half of filling among tortillas, roll up, arrange in a baking dish. Repeat in second dish. *Top each with 1/2 cup enchilada sauce. Sprinkle with remaining cheeses. Place on baking sheet. Bake until bubbly 30 min. SERVE & ENJOY...
