CHEESY SPINACH PIE
MAKES 6 SERVINGS.
2 tbs oil
1 onion, chopped
Three 10 oz pkgs frozen chopped spinach
1/2 cup grated Parmesan
8 oz feta cheese, diced
1/4 cup breadcrumbs
1/2 tsp nutmeg
4 eggs, beaten
16 oz pkg phyllo dough
6 tbs unsalted butter, melted
Heat oven to 350 degrees. Warm oil in a skillet. Cook onion until softened. Transfer to a bowl. Squeeze out moisture from spinach. Add to bowl with onion. Stir in cheeses, breadcrumbs, salt, pepper, nutmeg, and eggs, mix well. *Butter a baking pan. Unroll phyllo, cover with moistened paper towels. Line pan with 1 phyllo sheet. Brush with butter. Top with another sheet, butter again. Repeat for a total of 6 sheets. *Spread spinach mixture in pan. Fold edges of phyllo onto filling. Trim edges. Place 1 sheet of phyllo on top of filling, brush with butter. Repeat with remaining phyllo and butter. Bake until browned 45 min. Let cool 15 min. before SERVING & ENJOY...
