YUMMY BERRY PIE
MAKES 8 SERVINGS.
1 piecrust
1/4 oz pkg unflavored gelatin
6 cups sliced strawberries
2/3 cup strawberry preserves
1 lemon, zested, juiced
Heat oven to 400 degrees. Arrange crust in greased pie plate, crimp edges. Bake 18 min. or until done. Cool. In bowl, sprinkle gelatin over 2 tbs water. Let sit 2 min. Microwave 15 seconds or until melted. In processor or blender, pulse 2 cups berries, preserves, 2 tsp lemon juice, 1/2 tsp lemon zest and gelatin until blended, stir in remaining berries. Spoon mixture into crust. Chill until set. SERVE & ENJOY...
