TOMATO WATERMELON SALAD
MAKES 6 SERVINGS.
2 tbs balsamic vinegar
1 tbs lemon juice
1/2 cup oil
1 pint cherry tomatoes
2 other tomatoes
1 tsp sugar
1 tbs chopped tarragon
4 strawberries, hulled, cut into pieces
1 cup cubed watermelon
Whisk vinegar, lemon juice, and oil in a bowl, season, set aside. Cut cherry tomatoes in half, slice other tomatoes. Arrange in a single layer, season, sprinkle with sugar. *Transfer to a bowl, drizzle with half the dressing. Add tarragon and strawberries, toss. Divide tomato mixture among plates. Drizzle with more dressing, top with watermelon. SERVE immediately & ENJOY...
