SPINACH EGG-WHITE CREPE
MAKES 2 SERVINGS.
Oil
2 green onions, julienne
1 garlic clove, diced
1 small bag spinach, stems removed
1/2 cup crumbled feta cheese
1/2 cup grated Parmesan cheese
1 tbs chopped dill
1 cup egg whites
Sliced onion rings
Chives
Salt and Pepper
Heat oven to 300 degrees. In a skillet, heat oil. Add green onions and garlic, saute 1 min. Add spinach to wilt, transfer to bowl, return pan to heat. Add 1/4 cup feta, 1/4 cup Parmesan, and dill to spinach, season. Transfer to paper towels. *In another skillet, heat oil. Beat egg whites. Pour 1/2 into pan, season, cook until crepe is firm. Slide onto cookie sheet covered with parchment, repeat. Place half of spinach filling in each crepe, roll closed. Transfer to oven to warm through 1 min. Transfer to plate, sprinkle with feta and Parmesan. SERVE with onion rings dill, chives and pepper & ENJOY...
