FROSTED MINT LIME-CUPCAKES
MAKES 24 CUPCAKES.
1 pkg white cake mix
3 tbs minced mint
16 oz pkg white frosting
2 limes, zested, juiced
Green food coloring
2 tbs coarse sparkling sugar
Heat oven to 350 degrees. Line two 12 well cupcake pans with paper liners. Prepare cake mix as package directs, adding mint. Divide batter among cupcake liners. Bake 20 min. or until done, cool. *In bowl, stir together frosting, 1 tbs lime zest, 1 tbs lime juice. Tint to desired green color. Spoon frosting into pastry bag fitted with star tip. Pipe frosting onto cupcakes. Sprinkle sparkling sugar over frosting. Garnish each cupcake with a lime slice. SERVE & ENJOY...
