CHILE OIL QUINOA-SALAD
MAKES 5 SERVINGS.
3/4 cup quinoa
2 zucchini, sliced
2 onions, sliced
1/8 cup oil
1/2 bunch basil
1/4 cup lemon juice
1/8 cup chile oil
Bring pot of salted water to a boil. Add quinoa, cook until tender, drain, cool. Heat a grill. Drizzle zucchini and onions with oil, season, toss. Grill vegetables until marked and slightly soft, cool, chop, transfer to a bowl. *Add quinoa and basil to bowl, toss. Whisk 1/4 oil, lemon juice, and chile oil in a bowl until emulsified, season. Drizzle over salad before SERVING & ENJOY...
