VEGGIES WITH PORK-CHOPS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 cup long grain rice
1 tbs each red wine vinegar, capers, chopped, and parsley, chopped
1 tsp Dijon mustard
2 tbs plus 2 tsp oil
Salt and Pepper
4 pork chops
6 tomatoes, halved
Cook rice according to package directions. Heat grill. In a bowl, whisk together vinegar, mustard, 2 tbs oil and pepper. Stir in capers and parsley. Season pork with salt and pepper, grill until cooked through. *Brush cut sides of tomatoes with remaining oil. Grill until charred. Turn, grill 1 min. transfer to a plate. SERVE pork chops and tomatoes with rice, top with vinaigrette & ENJOY...
