VEGGIES & GRILLED SHRIMP
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
3 oranges
1 cup couscous
3 green onions, sliced
Salt and Pepper
1 pound asparagus, trimmed
1 tbs oil
20 peeled deveined shrimp
1/2 tsp cumin
1/4 tsp cayenne pepper
Heat grill. Cut one orange in half. Cut remaining oranges into rounds. Squeeze juice from half an orange into a bowl. Add couscous, green onions, and salt. Add 1 cup hot water, let sit 15 min. *In a bowl, toss asparagus with oil, salt and pepper. Season shrimp with cumin, cayenne and salt. *Place asparagus, orange slices and orange half on grill, cook until oranges are charred and asparagus is tender, transfer to a plate. *Add shrimp to grill, cook until opaque. Squeeze orange half over shrimp just before they are done. Fluff couscous. SERVE with shrimp, asparagus and orange slices & ENJOY...
