TUNA 4-BEAN SALAD
MAKES 8 SERVINGS.
Salt and Pepper
1/2 cup cider vinegar
3 tbs Dijon mustard
2 tbs honey
2 tbs oil
1 onion, sliced
1 pound green beans
12 oz shelled edamame
15.5 oz can red kidney beans, drained
15.5 oz can black beans, drained
5 oz can water packed tuna, drained, flaked
Bring a pot of salted water to a boil. In a bowl, whisk vinegar, mustard, honey and oil. Stir in onion, marinate 15 min. Blanch green beans in boiling salted water 3 min. Drain beans, add to a bowl with ice water. Drain beans, cut into thirds crosswise. Add green beans and remaining ingredients to bowl, toss. Season with salt and pepper. SERVE & ENJOY...
