APPLES WITH ALMOND-CHICKEN
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 bunch kale, stems removed, leaves cut into pieces
2 apples, cut into wedges
3 tbs oil
Salt
1/2 cup almond butter
1/3 cup milk
1 tbs honey
4 skinless boneless chicken breasts
Flour
2 cups breadcrumbs
Lemon wedges
Heat oven to 425 degrees. Toss kale and apples on a baking sheet with oil and salt. Roast until apples are tender and kale is crisp 20 min. Whisk almond butter with milk, honey and salt in a bowl. Dredge chicken in flour, coat with almond butter mixture, then roll in breadcrumbs. Heat 1/2" oil in a skillet. Pan fry chicken until crispy and cooked through. SERVE with kale, apples and lemon wedges & ENJOY...
