TOFU VEGGIE HASH
MAKES 1 SERVING.
2 tsp oil
1/3 of a 14 oz pkg extra firm tofu, drained, cut into cubes
3/4 cup frozen corn
1 poblano pepper, diced
2 green onions, sliced
1/4 tsp cumin
1/3 cup pico de gallo
1 tbs chopped cilantro
In a skillet, heat oil. Add tofu, corn, chile, half of green onions and cumin, season. Cook until tofu is lightly browned. Add remaining green onions and pico de gallo, stir until heated through. Transfer to a bowl, sprinkle with cilantro. SERVE & ENJOY...
