ENERGY-BARS WITH YOGURT
MAKES 8 SERVINGS.
1/3 cup plus 2 tsp coconut oil
2 cups rolled oats
1 1/2 cups pastry flour
1/4 cup sugar
1/2 tsp cinnamon
1 tsp salt
1/2 cup honey
1/2 cup peanut butter
2 eggs
1 1/2 tsp vanilla
One container yogurt
Coat a 9x13" baking pan with 2 tsp coconut oil. In a bowl, combine oats, flour, sugar, cinnamon and 3/4 tsp salt. In a bowl, combine honey, peanut butter, and remaining coconut oil. *Whisk in eggs and vanilla. Stir egg mixture into oat mixture until combined. Spread batter in pan. Sprinkle with 1/4 tsp salt. Bake at 350 degrees until golden 35 min. Let stand 10 min. Cut into 8 bars. SERVE each bar with a container of yogurt & ENJOY...
