FLUFFY BUTTERMILK-BISCUITS
MAKES 15 BISCUITS.
2 1/2 cups all purpose flour
1 cup cake flour
1 1/2 tbs baking powder
3/4 tsp baking soda
3/4 tsp salt
1/4 cup lard
1 1/2 cups buttermilk
1 1/2 tbs butter, melted
Heat oven to 450 degrees. Sift first 5 ingredients into a bowl. Blend in lard. Form a well in center of flour mixture, add buttermilk. Stir until blended. *Transfer mixture to a floured work surface, knead until dough comes together. Pat into a 12x18" rectangle, cut into fifteen 2 1/2 x 1 3/4" rectangles. *Line a baking sheet. Brush with some of the butter. Transfer biscuits to baking sheet. Brush biscuits with remaining butter. Bake until golden 15 min. SERVE & ENJOY...
