ROASTED CORN CHEESE RAVIOLI
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 lemon
4 small zucchini, cut into pieces
3 cloves garlic, chopped
2 tbs olive oil
Salt and Pepper
1/2 cup Parmesan cheese, grated
1 cup corn kernels
1 pound cheese ravioli
Heat oven to 450 degrees. Bring a pot of water to a boil. Remove 3 strips zest from lemon, slice zest. In a bowl, toss together zucchini, garlic and zest with oil, salt and pepper. Fold in Parmesan. Transfer mixture to a baking sheet. Roast 14 min. *Scatter corn over zucchini, toss. Roast until zucchini is golden and tender 3 min. Cook ravioli in a pot of boiling water according to package directions. Transfer ravioli to plates, spoon zucchini mixture over top. Sprinkle with Parmesan. SERVE & ENJOY...
