3-PEPPER MACARONI SALAD
MAKES 8 SERVINGS.
8 oz elbow macaroni
1/4 cup light mayonnaise
1/4 cup lowfat sour cream
2 tbs lime juice
Salt and Pepper
3 bell peppers, 1 each red, orange and green, chopped
2 stalks celery, chopped
1 cup corn kernels
3 green onions, sliced
1/4 cup pickled sweet red cherry peppers, chopped
1/2 cup cilantro, chopped
1 jalapeno, seeded, chopped
Cook pasta according to package directions. Drain. In a bowl, whisk together mayo, sour cream, juice, salt and pepper. Add macaroni, toss. Fold in peppers, celery, corn, green onions, cherry peppers, cilantro and jalapeno. SERVE & ENJOY...
