PORK WITH PINEAPPLE-SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 tbs brown sugar
1 tsp chili powder
1/2 tsp cumin
1 tbs plus 2 tsp oil
Salt and Pepper
2 pork tenderloins, 3/4 pound each
1/2 pineapple, sliced
1 onion, sliced
2 cups spinach
Heat grill. In a bowl, combine brown sugar, chili powder, cumin, 2 tsp oil, salt and pepper. Rub mixture all over pork, grill until done. Transfer to a cutting board, let rest 3 min. before slicing. *In a bowl, toss together pineapple and onion with remaining oil. Place on grill with pork, cook until pineapple is lightly charred and onions are tender, transfer to a cutting board. Cut pineapple into chunks, separate onion rings, return to bowl. *Add spinach, season with pepper, toss until spinach begins to wilt. SERVE with pork & ENJOY...
