FISH WITH POTATO SALAD
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
1 1/2 pounds potatoes, quartered
Salt and Pepper
3 tbs buttermilk
3 tbs mayonnaise
4 tsp relish
2 stalks celery, sliced
2 green onions, sliced
3 egg whites
1 1/2 cups breadcrumbs
1 1/4 pounds fish, cut into 8 pieces
1 tsp paprika
Lemon wedges
Heat oven to 450 degrees. Put potatoes in a pan, cover with water, season with salt. Bring to a boil, simmer until tender. Drain. *Combine buttermilk, mayo and relish in a bowl. Add potatoes, celery, green onions, salt and pepper, toss. Refrigerate. *Whisk egg whites in a bowl. Put breadcrumbs in another bowl. Season fish with paprika, salt and pepper. Dip each fish piece in egg whites, then dredge in breadcrumbs. Transfer to a rack set over a baking sheet. *Coat fish on both sides with cooking spray. Bake until golden and cooked through 12 min.
