[SimplifyMe] Cheesy Pistachio {Asparagus}

 

CHEESY PISTACHIO ASPARAGUS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.

1/2 cup pistachios
6 basil leaves
1 tbs grated Parmesan cheese
1 tsp lemon zest
1 clove garlic
2 tbs oil
20 asparagus spears

In blender, pulse 1/4 cup nuts and next 4 ingredients until crumbly. In skillet, heat oil. Add asparagus, cook 4 min. Add 1/4 cup water, boil 2 min. Season. Top with pesto and remaining nuts. SERVE & ENJOY...
