LEMON BREAD---Easy to make and delicious.
MAKES 12 SERVINGS.
1/2 cup each unsalted butter, melted, and milk
1 tsp each baking powder and salt
1 cup sugar
3 tbs lemon extract
2 eggs
1 1/2 cups sifted flour
2 tbs grated lemon rind
ICING---
1/4 cup lemon juice
1/2 cup sugar
Heat oven to 350 degrees. Grease and flour a loaf pan. In a bowl, mix together butter, sugar and lemon extract. Beat in eggs. In a separate bowl, sift together flour, baking powder and salt. *Add flour mixture to butter mixture, alternating with milk, beat to blend. Fold in lemon rind, pour into pan. Bake 1 hour or until done. Cool 10 min. remove from pan. ICING---Mix together lemon juice and sugar. While bread is still hot, pour icing over top and into any cracks. SERVE & ENJOY...
