BACON MAC & CHEESE---Nothing better than mac & cheese with bacon in it.
MAKES 6 SERVINGS.
2 tbs each butter, flour and chopped parsley
1/2 cup each heavy cream, grated Gouda, grated Fontina and grated cheddar
6 oz bacon, cut crosswise into strips
1 leek, halved lengthwise, sliced
1 tsp salt
1 cup milk
8 oz elbow macaroni
Heat oven to 350 degrees. In a pan, cook bacon until crisp, transfer bacon to paper towels. Pour off all but 1 tbs of drippings. Add leek, cook until tender. Add butter, melt. Add flour and salt, season with pepper, stir 1 min. *Whisk in milk, cream and 2 cups water. Bring to a boil, then simmer until slightly thickned. In a bowl, combine cheeses. Stir 1 cup cheese mixture, bacon and parsley into sauce. Pour macaroni into an 8x8" baking dish. *Top with sauce, stir. Sprinkle with remaining cheese. Bake until pasta is tender 25 min. Let rest 10 min. before SERVING & ENJOY...
