GOLDEN MASHED POTATOES
MAKES 6 SERVINGS.
3 green onions, sliced
1/3 cup lowfat buttermilk
Salt and Pepper
1 1/2 tbs olive oil
1 pound sweet potatoes
1 pound yukon gold potatoes
Peel gold potatoes, quarter them lengthwise, then cut crosswise into pieces. Place in a saucepan with 5 cups water and 1 tsp salt. Bring to a simmer, then continue simmering until tender. Puree golds into a bowl, reserve saucepan of water. Cover gold puree, keep warm. Peel sweet potatoes, cut them into cubes. Add to reserved pan of water, simmer until tender. Drain, puree into bowl with golds. Stir to combine, adding buttermilk, salt and pepper to taste. Wipe out saucepan. Add oil and green onions, cook until heated through. Spoon warm green onion oil over potato mixture, then SERVE...
