MINI FRUIT CHEESECAKES
MAKES 9 SERVINGS.
1 tbs lemon zest
1 cup whipping cream
1 tsp vanilla
3 tbs butter, melted
1 cup graham cracker crumbs
2 cups blueberries
3 eggs
3 pkgs 8 oz each cream cheese
3/4 cup plus 2 tbs sugar
Heat oven to 325 degrees. Mix graham crumbs, 2 tbs sugar and butter until blended, press into bottoms of 18 paper lined muffin pan cups. Beat cream cheese, remaining sugar and vanilla until blended. Add eggs, mixing until blended. Pour over crusts. Bake 30 min. or until centers are almost set. Cool completely. Refrigerate 2 hours. Beat whipping cream until stiff peaks form, spread onto cheesecakes. Top with blueberries and zest, then SERVE...
