LEMONY BEANS & RADISHES
MAKES 6 SERVINGS.
2 tbs each olive oil and toasted pine nuts
1 tbs sherry vinegar
1 clove garlic, minced
1 pound green beans, trimmed
2 tsp lemon juice
6 radishes, trimmed, halved
In pot, cook green beans in boiling salted water until crisp tender, drain. In skillet, cook radishes and garlic in oil until radishes are crisp tender. Add green beans, vinegar and lemon juice. Cook until heated through. Season with salt and pepper. Arrange vegetables on platter. Sprinkle with pine nuts, then SERVE...
